Vegetarian BBQ Pulled Pork Sandwiches

Happy Meatless Monday gang! To say that it’s been busy around here lately would be a crazy understatement, so this week’s Meatless Monday post is one that you can throw together in less than 20 minutes.

Can I get a HECK YES!?

It is no secret that I am not above buying things pre-chopped from the grocery store. It’s not an all-the-time thing, but it’s definitely an “oh crap, I need something to serve the people that live in my house-thing”. If you’re not a person who likes strangers handling their food and then shoving it into a container, feel free to do the choppin’ on your own! Also, maybe steer clear from restaurants from now on…

(So that I give credit where credit is due, this recipe was inspired by Yup It’s Vegan, which you all should totally check out)

What You’ll Need

2 Tbs olive oil

2 sweet potatoes (shredded – because I prepped this on a Sunday, I shredded veggies myself, but buying pre-shredded transforms this recipe from easy to “your husband could handle it”)

1/4 -1/2 c. of your favorite BBQ sauce

salt & pepper, to taste

1 tbs. Hidden Valley Ranch seasoning

Whole wheat hamburger buns


What You’ll Do

If you can’t buy your sweet potatoes pre-shredded, grab your cheese grater and go to town!

Heat olive oil over medium heat and add sweet potatoes

Sprinkle with salt and pepper, toss to coat

Sautee over medium heat until cooked through. Usually about 7-10 minutes or until sweet potatoes begin to brown.

Add BBQ sauce, toss to coat and cook for 3-5 minutes, stirring occasionally

Remove from heat and add 1 tbs. Hidden Valley Ranch seasoning, toss to coat

Serve on buns and top with toppings of your choice

    • Haha my kids will have a few bites, but I have to make sure the BBQ sauce isn’t the LEAST bit spicy or we will have a dinnertime situation on our hands!

    I wasted so much time and had many tantrums with a shredder and a sweet potato.

    • You are awesome. Shredding veggies is basically just bloody knuckles waiting to happen. I try to buy them prepped whenever I see them in the store!
