Transform Meatless Monday with Kid-Friendly Naan Pizzas with Mezzetta Peperoncini

Years and years ago, before I was an old, married lady, my then-boyfriend-now-husband and I used to frequent this little dive bar in East Nashville after each of his baseball games. This was long before I became a vegetarian, but like the dainty little flower I am, I often wanted something a little lighter than a bucket of chicken wings or trough of BBQ ribs.

Surprisingly, this joint had one item on its menu that fit the bill – a Naan pizza with hummus, veggies, feta and shredded mozzarella.  I kid you not, it was one of the most delicious meals I’ve ever enjoyed while drinking beer after a baseball game and I’ve been striving to recreate for the past eight years.

One thing I love about this recipe is that my kids love building their own Naan pizzas right along with me! We like to mix ‘n’ match our base sauce and veggies (I have to add extra Mezzetta Peperoncini to mine – I’m a sucker for extra spice!), to create a bit of a pizza tasting platter and it makes for a very happy dinner table.

This recipe has become a highly-requested staple in our house and I’m more than happy to oblige. It’s a super quick and easy weeknight dinner that you can make with things you probably already have in your fridge. I try keep us well-stocked with fresh veggies, hummus, and Mezzetta Peperoncini so I usually only have to add Naan and pizza sauce to my shopping list. Scratch that, I usually do have to remember to add extra feta and Mezzetta Peperoncini to my list because I’m always running out. Those are the two foods that I can find ways to involve in breakfast, lunch AND dinner, so I never have trouble getting to the bottom of the jars.

What You’ll Need

4 pieces of Naan (sometimes I use mini-Naan if I’m preparing this meal as an appetizer)

2 Tbs. olive oil, diverted (you’ll use an even amount on each Naan)

1 jar of your favorite Pizza Sauce and/or 1 tub of your favorite hummus

1 jar of Mezzetta Peperoncini

8-10 baby bell peppers, sliced

1 red onion, sliced

3 cups baby spinach

4-6 oz. crumbled feta cheese

8-10 oz. mozzarella cheese

2 tsp. dried basil

What You’ll Do

Brush each Naan with a small amount of Olive Oil

Spread a thin layer of sauce or hummus all over Naan

Cover with veggies (and if you’re like me extra Mezzetta Peperoncini and crushed red pepper)

Top with feta and mozzarella

Bake at 350 for 20 minutes or until cheese starts to brown and bubble.

Top with dried basil.

Divide and devour!

  • 4 pieces of Naan

  3. I’ve never made naan pizza but this looks really good! I’ve never tried those peperocini before!

    • I love it because it “feels” like you’re eating pizza, but it’s a much lighter option. PLUS my kids go crazy for “make-your-own” anything 😉

  5. YUM! this looks so good! my kids won’t eat pepperocinis if I paid them! BUT! i really really love eating these on everything. have you ever had these with extra crispy fries? life changing… you’re welcome in advance!

    • Ummmmmm NO! That sounds INCREDIBLE!! Do you make them????

      • LOLOLOL! NO. I would have burnt potatoes because I have a tendency to over cook my fries to get them extra extra crispy.
        If you ever have some pepperocinis in the fridge and the kids bring home some fries — chick fil a or five guys are the best pairs. if not, then i’m sure you can make your own fries but just double fry them for extra crispiness. i’m a texture eater lol

        • I am a huge texture eater too! Cannot STAND yogurt. I need something for my teeth to do! Now I’m drooling for some Chick-fil-a fries!!!
