Spaghetti Squash and Meatless Meatballs

I’ll say one thing about this whole #MeatlessMonday recipe share, it’s keeping me honest about mixing up the meals I’m serving to my family! I never realized how much of a routine-based chef I was, until I started keeping a log of the meals in my repertoire.

Um, turns out I’m kind of a big, fat bore! Maybe you already knew this about me? I however, was completely shocked. It also turns out I have a fairly high opinion of myself.

I can address that in another post.

For this week’s recipe, you have the choice to make a meal as easy or as complicated as you’d like (and I’ll be real here, this week – I opted for easy.)

What You’ll Need

Cooking Spray

1 Spaghetti Squash, halved with seeds removed

1 Tbs Oregano

1 Tbs Dried Basil

1 Tbs Rosemary

1 jar of your favorite spaghetti sauce

Gardein frozen meatless meatballs

-or-

3/4 c. cooked quinoa (rinsed, if you want. Do you guys rinse your quinoa? I never do and I haven’t died yet.)

1 egg

1 c. panko breadcrumbs

1/3 c. parmesan cheese

2 Tbs. tomato paste

1 tsp. oregano

1 tsp. garlic powder

What You’ll Do: Squash

  • Preheat oven to 400 degrees, prepare baking sheet with non-stick cooking spray
  • Halve squash, remove seeds, find seeds all over your house for the next 24-hours because they are slippery little SOBs and always wiggle their way off the counter top.
  • Spray each side of squash with a thin coat of cooking spray
  • Sprinkle with rosemary, oregano and basil
  • Place face-down on baking sheet and bake for 45 minutes, or until skin is easily pierced with a fork.
  • Once squash has finished baking, scrape out insides with a fork and divide into 3-4 servings

What You’ll Do:Β Meatless Meatballs

Option A)

  • Open jar of sauce, pour in pot
  • Open package of meatballs, plop into that same pot.
  • Cover and simmer for 20 minutes
  • Told you. Easy.

Option B)

  • Prepare quinoa according to package directions
  • Combine cooked quinoa with breadcrumbs, egg, tomato paste, parmesan cheese and spices
  • Wet hands (just trust me on this one) and roll mixture into 1″ balls and place on prepared baking sheet
  • You’re going to want to rinse and re-wet your hands several times throughout this process.
  • Bake “meatballs” for 30-35 minutes
  • Top spaghetti squash with sauce, meatballs, sprinkling of parmesan cheese, herbs and serve

I’m just going to leave these options right here and based on the type of day you’re having, you can decide which one works best for your family.

  8. Every year, we join the farmer’s share, and we always get an abundance of spaghetti squash. I love cooking it instead of spaghetti noodles! But it’s so expensive otherwise.

    • Yes! Let me know how it goes! I’ve almost injured myself MANY times trying to slice one open, but if you microwave it for a minute or so beforehand, it softens the outside and makes it way easier, with significantly less flesh wounds.
