One-Pot Meatless Curry Noodles

I feel like I need to disclose something to you guys. I really want to lose three pounds…

Oh my God, what are you talking about? You’re so skinny.

But all kidding aside, who isn’t interested in shedding a little of their winter cushion? I tried on some of my jorts a few weeks back and much to my chagrin, the derrière was a liiiiiittle bit snugger than I’d like. So I sought out a few new meatless recipes that are just a little bit lighter – in the hopes that I too, would become so.

This one-pot wonder comes courtesy of WeightWatchers (of course some changes were made to make it my own) But, who knew Oprah’s new pet project had some totally kick *ss recipes up their sleeves? Last time I tried WW, it involved avoiding fruits because they were too many points and keeping a cardboard slider in my car’s glovebox to calculate my calories, but they’ve come a long way baby!

 

What You’ll Need

6oz. uncooked fettuccine

1 large red bell pepper, thinly sliced

1 large carrot, peeled and sliced into 2″ strips

1 small red onion, thinly sliced

1 Tbs. Thai red curry paste

2 tsp grated ginger root

3 c. fat-free vegetable broth

1 c. light, unsweetened coconut milk

2 cups broccoli slaw (or savoy cabbage, thinly sliced)

1 tsp lime zest

2 Tbs lime juice

1/2 tsp salt

1/4 c. cilantro, chopped (optional, but yummy)

What You’ll Do

  • Combine pasta, veggies, curry paste, ginger, broth and coconut milk in a large pot. Bring to a boil over high heat. Cook, uncovered for 8 minutes. Take care to turn the noodles with tongs every so often, so they don’t stick to the pot.
  • Stir in broccoli slaw (or cabbage) and continue to cook until the liquid has reduced to a sauce-like consistency.
  • Remove from heat and add in lime zest, lime juice and salt.
  • Serve topped with cilantro.

  9. Just discovered your blog. These meatless curry noodles look amazing. Will try them this weekend. That cauliflower recipe tried it last night suffice to say there were no leftovers, really yummy.
