Cauliflower Tacos With Spicy Adobo Sauce

I feel like cauliflower is the cruciferous vegetable that vegetarians just loooove to shove in the faces of anyone who will listen.

“Oh, have you tried cauliflower rice? It’s so good!”

“Have you done cauliflower pizza crust? It will change your life!”

“Do you do cauliflower buffalo wings? They’re to die for!”

I’m guilty of this too, because cauliflower is kind of a wonder-veggie. It can basically play to all categories of cuisines and it’s starchy nature allows for a unique versatility that most veggies can’t boast. These spicy cauliflower tacos are 10x better than I anticipated when I assembled this for the first time and I’ve already bought a refill of all the required ingredients to make it for a second time in one week. So, maybe after you try it, when us herbivores seem to prattle on about their latest escapades with broccoli’s second cousin, you’ll grant us one fewer eyeroll 😉

When I came across this amazing recipe from the wonderful people at Eating Well, I knew that I had to share it with you guys. It is bursting with savory flavor that the feta cheese balances perfectly. I hope you all enjoy it as much as I do!

What You’ll Need

2 limes (which will yield about 1/4 c. lime juice)

2 Tbs. chopped chipotle peppers in adobo sauce

1 Tbs honey

1 medium head cauliflower, cut into bite-sized pieces

1/2 large red onion

15 oz. can refried black beans

corn tortillas (warmed)

1/2 c. feta cheese

Optional toppings: broccoli slaw, cilantro, sliced avocado, plain greek yogurt

What You’ll Do

  • Preheat over to 450
  • Mix lime juice, chipotles, garlic and salt in blender or food processor until smooth. Feel free to add extra peppers for an extra punch!

  • Place cauliflower in a large bowl and cover in sauce. Stir to coat.

  • Spread cauliflower on baking sheet and top with sliced red onion

  • Roast veggies for 20 minutes or until slightly browned
  • Warm tortillas and top with refried beans (warmed, if you prefer), vegetables, feta cheese and toppings.
